Cocktail creations

Hot Buttered Rum Punch

Place sugar, butter, vanilla extract, and spices into a mug and mix. Pour in the syrup, rum, and juices before topping with hot water. Finish with a cinnamon stick and star anise!


  • 60ml Hawksbill Caribbean Spiced Rum
  • 25ml Orange Juice
  • 25ml Pineapple Juice
  • 25ml Maple Syrup
  • 10ml Lime Juice
  • 2tsp Brown Sugar
  • 1tbsp Unsalted Butter, Softened
  • 1 dash Vanilla Extract
  • 1 pinch Ground Cinnamon
  • 1 pinch Ground Nutmeg
  • 1 pinch Ground Allspice
  • 125ml Hot Water

Spiced Mango Daiquiri

Cheers to the festive season! Shake and double strain your cocktail into a coupe glass and top with a dusting of cinnamon.


  • 40ml Hawksbill Mango Spiced Rum
  • 10ml Velvet Falernum
  • 25ml Lime Juice
  • 25ml Cranberry Juice
  • 15ml Maple Syrup or Honey

Mulled Mai Tai

Christmas has arrived! Heat all ingredients in a pan on a medium heat and serve warm with an orange peel twist or wheel.


  • 50ml Hawksbill Pineapple Spiced Rum
  • 100ml Riesling White Wine
  • 25ml Lime Juice
  • 20ml Orgeat
  • 10ml Triple Sec

Gingerbread Mojito

Muddle the lime in a tall glass with the syrup and add crushed ice and Hawksbill rum. Stir and then add the mint leaves and more crushed ice. After another stir, top with a splash of ginger beer. Garnish with a mint sprig.


  • 50ml Hawksbill rum
  • 1 whole lime
  • 10ml Gingerbread syrup
  • Handful mint leaves

Spiced Tea

Refreshingly good! Simply build in a highball glass with cubed ice and finish with a fresh lemon wedge and mint spring.


  • 50ml Hawksbill Caribbean Spiced Rum
  • 200ml Lemon Iced Tea

Mango Coke Float

We're feelin' all nostalgic! Add your Mango rum and coke to a glass with ice and simply top with a scoop of your favourite vanilla ice cream.


  • 50ml Hawksbill Mango Spiced Rum
  • 200ml Cola
  • 1 Scoop of Vanilla Ice Cream

Piña Colada

Shake all the ingredients with ice and then pour into a tall glass filled with ice and then garnish with a pineapple wedge.


  • 30ml Hawksbill Pineapple Rum
  • 30ml White Rum
  • 100ml Pineapple Juice
  • 60ml Coconut Cream
  • 10ml Lime Juice

Hawksbill Mango Sorbet

Throw everything into a blender and then pop into the freezer for 2-4 hours to allow everything to set. This will make you 4-6 drinks that you can enjoy from a coupe glass like a slush!


  • 50ml Hawksbill Mango Spiced Rum
  • 25ml Lime Juice
  • 600g Frozen Mango Chunks
  • 25ml Maple Syrup


Shake up a Storm with our own variation on one of New Orlean’s best-loved rum cocktails.


  • 50ml Hawksbill rum
  • 25ml lime juice
  • 10ml Grenadine
  • 25ml Orange juice
  • 25ml passion fruit syrup

Pineapple Mojito

Build everything together in a glass with plenty of crushed ice and top with pineapple leaves and plenty of mint! We say peel your lime before juicing it to prevent any food waste too.


  • 50ml Hawksbill Pineapple Rum
  • 15ml Lime Juice
  • Dash of Pineapple Syrup
  • 6 Mint Leaves
  • Top with Soda

Mango Daiquiri

Shake up our fruity take on a rum classic and then double stain into a coupe glass. Top with some lime zest and enjoy all summer long!


  • 50ml Hawksbill Mango Rum
  • Juice 1/2 a Lime
  • 12.5ml Sugar Syrup

Pineapple Rum Punch

Double shake all the ingredients (wet first and then dry) and then pour into a Hurricane glass over ice. Garnish the drink with some fresh pineapple leaves.

  • 40ml Pineapple Juice
  • 25ml Orange or Cranberry Juice
  • 15ml Lime Juice
  • 15ml Cointreau
  • 10ml Disaranno or Orgeat

Mango Mai Tai

Fresh and fruity cocktails? Yes please! Shake up a storm with our new Mai Tai and garnish with some fresh pineapple. Perfection.


  • 50ml Hawksbill Mango
  • 25ml Pineapple Juice
  • 15ml Orgeat (or Amaretto)
  • 10ml Cointreau
  • Juice 1/2 a Lime

Hawksbill & Ginger Mojito

Build all the ingredients in a glass with ice and garnish with a mint spring and lime wedge.


  • 50ml Hawksbill Rum
  • 20ml lime juice
  • 15ml ginger syrup
  • Handful of clapped mint
  • Top with soda

Hawksbill Hard Shake

Shake & strain into a tall glass, like a hurricane glass or ice cream float serve and garnish with toffee crunch or honeycomb.


  • 37.5ml Hawksbill Rum
  • 12.5ml Caramel Syrup
  • Dash of Cinnamon Syrup
  • 150ml Milk
  • 20ml Fresh Cream

Mai Tai

Shake everything together (wet, then dry) and double strain into a rocks glass; tiki style!


  • 25ml Rhubarb Gin
  • 35ml Hawksbill rum
  • 10ml triple sec
  • 10ml lime juice
  • 15ml grapefruit juice
  • 10ml Orgeat syrup
  • 50ml Pineapple juice

Spiced Dirty Banana

Blend all of the ingredients together and then pour into a Hurricane glass or if you’ve got a sweet tooth, pour into your favourite Easter egg, add a whipped cream, a straw and enjoy! Recipe makes 1-2 shakes.


  • 40ml Hawksbill Rum
  • 1 Frozen Banana
  • 3 scoops of Vanilla Ice Cream
  • 50ml Single Cream
  • 20ml Crème de Banana

Pineapple Old Fashioned

Cheers to a Hawksbill take on a classic! Stir everything together (without ice) and then strain into a class and garnish with some fresh pineapple.


  • 45ml Hawksbill Pineapple Rum
  • 20ml Pineapple Syrup
  • 15ml Lillet Blanc

R 'n R Colada

We're summertime sippin' Hawksbill-style with our version of everyone's favourite summer cocktail, piña colada.


  • 37.5ml Hawksbill Rum
  • 50ml Half & Half
  • 12.5ml Fig Liqueur
  • Pineapple Leaf
  • Nutmeg

Rum Spiced Latte

Shake rum, coffee and vanilla syrup together and strain into a latte glass. Separately shake 25ml double cream with 10ml vanilla syrup until thickened. Pour over back of spoon and then garnish with cinnamon and coffee beans.


  • 50ml Hawksbill rum
  • 50ml Espresso
  • 10ml Vanilla syrup
  • 25ml double cream

Damp and Drizzly

Muddle the lime over sugar in the bottom of a tall glass and mix the sugar and lime together until a paste is made. Add crushed ice, rum and stir and top with ginger ale.


  • 50ml Hawksbill rum
  • ½ tsp demerara sugar
  • Half a lime sliced into quarters
  • 200ml Fever Tree Spiced Orange Ginger Ale

  • 50ml Hawksbill rum
  • 15ml Grapefruit Juice
  • 10ml lime juice
  • 1 tsp demerara sugar
  • 5ml maraschino liqueur

Rum Sour

Shake all ingredients together and double strain into a rocks glass. Garnish with lemon peel.


  • 35ml Hawksbill rum
  • 15ml triple sec
  • 50ml pineapple juice
  • 25ml lemon juice
  • 15ml sugar syrup


Shake and strain into a Collins glass. Top with soda and garnish with an orange slice.


  • 50ml Hawksbill rum
  • 15ml lime juice
  • 25ml pineapple juice
  • 25ml orange juice
  • 10ml sugar syrup
  • 15ml Apricot or Peach Liqueur

Champagne Syrup Spritz

Build all of the ingredients together in a large wine glass. For the syrup, you'll need: 1 cup sugar, flat champagne, sliced overly ripe pear, thumb of ginger, cinnamon stick and need to simmer all together a low heat until the sugar has dissolved.


  • 50ml Hawksbill rum
  • 20ml lime juice
  • 15ml champagne syrup
  • Top with soda

Ginger Fizz

Build all the ingredients together in a flute glass. To make the ginger syrup, peel some ginger and chop into tiny cubes then immerse in sugar. Leave for a couple of days and sugar will have drawn liquid out of ginger and formed a syrup. You can use some flat prosecco to thin it out.


  • 25ml Hawksbill rum
  • Lemon juice to taste
  • 15ml homemade ginger syrup
  • Top with prossecco

Spiced Cuba Libre

Keep it simple with this classic rum cocktail and allow the delicate spices to shine through.


  • 50ml Hawksbill rum
  • Cola
  • 1 lime

Planters Punch

Shake all ingredients together and strain over crushed ice in a rocks glass. Add a splash of soda and a mint sprig to garnish.


  • 35ml Hawksbill rum
  • 20ml lime juice
  • 10ml sugar syrup
  • 5ml grenadine
  • 3 dashes angostura bitters
