Hawksbill Old Fashioned

Try our take on the well-loved and classic 'Old Fashioned' created for Father's Day. Cheers to you, Dad!


  • 50ml Hawksbill Rum
  • 1/2 teaspoon demerara sugar
  • 2 dashes orange bitters

Hawksbill Hard Shake

Shake & strain into a tall glass, like a hurricane glass or ice cream float serve and garnish with toffee crunch or honeycomb.


  • 37.5ml Hawksbill Rum
  • 12.5ml Caramel Syrup
  • Dash of Cinnamon Syrup
  • 150ml Milk
  • 20ml Fresh Cream

Mai Tai

Shake everything together (wet, then dry) and double strain into a rocks glass; tiki style!


  • 25ml Rhubarb Gin
  • 35ml Hawksbill rum
  • 10ml triple sec
  • 10ml lime juice
  • 15ml grapefruit juice
  • 10ml Orgeat syrup
  • 50ml Pineapple juice

  • 50ml Hawksbill rum
  • 25ml lime juice
  • 10ml Grenadine
  • 25ml Orange juice
  • 25ml passion fruit syrup

Spiced Cuba Libre

Keep it simple with this classic rum cocktail and allow the delicate spices to shine through.


  • 50ml Hawksbill rum
  • Cola
  • 1 lime

Damp and Drizzly

Muddle the lime over sugar in the bottom of a tall glass and mix the sugar and lime together until a paste is made. Add crushed ice, rum and stir and top with ginger ale.


  • 50ml Hawksbill rum
  • ½ tsp demerara sugar
  • Half a lime sliced into quarters
  • 200ml Fever Tree Spiced Orange Ginger Ale

  • 50ml Hawksbill rum
  • 15ml Grapefruit Juice
  • 10ml lime juice
  • 1 tsp demerara sugar
  • 5ml maraschino liqueur

Rum Sour

Shake all ingredients together and double strain into a rocks glass. Garnish with lemon peel.


  • 35ml Hawksbill rum
  • 15ml triple sec
  • 50ml pineapple juice
  • 25ml lemon juice
  • 15ml sugar syrup


Shake and strain into a Collins glass. Top with soda and garnish with an orange slice.


  • 50ml Hawksbill rum
  • 15ml lime juice
  • 25ml pineapple juice
  • 25ml orange juice
  • 10ml sugar syrup
  • 15ml Apricot or Peach Liqueur


Churn all ingredients with ice and a crushed iced crown in a copper tin. Top with a cone of crushed ice and garnish with a mint sprig and a dusting of icing sugar.


  • 50ml Hawksbill rum
  • 10ml vanilla syrup
  • Handful mint leaves
  • ½ tsp of runny honey
  • 2 dashes angostura bitters

Frozen Rum Punch

Add all the ingredients to a blender and blitz until smooth. Add some extra ice for a thicker consistency. Garnish with a dehydrated orange wheel.


  • 50ml Hawksbill Rum
  • 25ml lime juice
  • 50ml orange juice
  • 50ml pineapple juice
  • Handful frozen British strawberries

Champagne Syrup Spritz

Build all of the ingredients together in a large wine glass. For the syrup, you'll need: 1 cup sugar, flat champagne, sliced overly ripe pear, thumb of ginger, cinnamon stick and need to simmer all together a low heat until the sugar has dissolved.


  • 50ml Hawksbill rum
  • 20ml lime juice
  • 15ml champagne syrup
  • Top with soda

Ginger Fizz

Build all the ingredients together in a flute glass. To make the ginger syrup, peel some ginger and chop into tiny cubes then immerse in sugar. Leave for a couple of days and sugar will have drawn liquid out of ginger and formed a syrup. You can use some flat prosecco to thin it out.


  • 25ml Hawksbill rum
  • Lemon juice to taste
  • 15ml homemade ginger syrup
  • Top with prossecco

Planters Punch

Shake all ingredients together and strain over crushed ice in a rocks glass. Add a splash of soda and a mint sprig to garnish.


  • 35ml Hawksbill rum
  • 20ml lime juice
  • 10ml sugar syrup
  • 5ml grenadine
  • 3 dashes angostura bitters

Rum Spiced Latte

Shake rum, coffee and vanilla syrup together and strain into a latte glass. Separately shake 100ml double cream with 10ml vanilla syrup until thickened. Pour over back of spoon and then garnish with cinnamon and coffee beans.


  • 50ml Hawksbill rum
  • 50ml Espresso
  • 10ml Vanilla syrup
  • 25ml cream

Gingerbread Mojito

Muddle the lime in a tall glass with the syrup and add crushed ice and Hawksbill rum. Stir and then add the mint leaves and more crushed ice. After another stir, top with a splash of ginger beer. Garnish with a mint sprig.


  • 50ml Hawksbill rum
  • 1 whole lime
  • 10ml Gingerbread syrup
  • Handful mint leaves
